They use Chillis as a vegetable rather than as a spice so you have "Chillies and Cheese" which is just a big pile of chillis with some cheese sauce on top. About the hottest thing I've ever eaten. Lots of rice and vegetables and also a brilliant local beer called Red Panda.<br /><img src='http://www.thekirks.co.uk/blog/RedPanda.jpg' alt='Red Panda Beer label' /> Very very hot. No getting stuck in the middle of nowhere with only a pile of warm yak dung to sleep in. One of the interesting (and slightly surprising thing) is the food. The Bhutanese use chillies as a vegetable rather than as a spice so you find yourself sitting down at night for a nice bowl of braised chillies and cheese sauce. Also, I missed getting a photograph of the plane coming in to land at Paro airport. It's one of the most exciting landings anywhere in the world because Bhutan doesn't have a huge amount of flat land and there's a big hill in the way before you get to the (very short) runway. It's exciting to see Dzongs and prayer flags <b>above</b> you when you're flying down the valley.
